I hope you enjoyed the World Cup and agree that South Africa and the people of South Africa gave the whole world a phenomenal experience! I was fortunate enough to go to quite a few of the matches and meet many visitors who came to the Constantia Valley and I am pleased to the point of nearly gloating that they all said Cape Town was the BEST City in the Country and somewhere they would definitely visit again, especially in the summer time. Feedback like that demands we all carry on promoting the Mother City at every available opportunity.

 

The highlight of the world cup for me (aside from the Spaniards winning) was having the opportunity via Cell C through their Social Responsibility Programme to chaperone a group of extremely excited KiDS Foundation Scholars to the Semi Final and unexpectedly meeting one of the most gracious, humble and inspiring gentleman in the form of Archbishop Emeritus Desmond Tutu. Sir, thank you for taking the time to come and meet the KiDS Foundation scholars and for providing them with a once in a lifetime photographic opportunity and to Cell C DITTO! (The KiDS Foundation is a Constantia based education foundation which provides High School scholarships for children from financially disadvantaged families see: www.kidsfoundation.co.za)

Eagles' Nest Wines - Eagles open up their nest
 

 
Eagles’ Nest, the boutique Constantia winery, will be open to the public for sales and tastings as of the 2nd August. Since their first release in 2008, visits to the farm have only been possible by appointment but an ever increasing demand for their award winning wines has resulted in this very exciting new move.
  

Andrew Leaver, Commercial Manager at Eagles’ Nest commented: “We are delighted to be open to the public so they can experience our beautiful farm and taste our wines. We have three new wines joining the range and our tasting room will be the ideal place for our customers to come and experience them.”
  
The Eagles’ Nest range currently consists of the 2008 Viognier, 2006 Merlot and 2008 Shiraz. Joining the range in August will be the 2008 Verreaux (a super premium Merlot-based blend), 2010 Sauvignon Blanc and The Little Eagle 2008; a blend of Merlot, Cabernet Franc and Petit Verdot. A portion of the proceeds from the sale of The Little Eagle will be used to support the Western Cape Raptor Research Programme.

Klein Constantia restores fynbos glory
 

 
Whilst this is normally a quiet time for us, we have enjoyed a nice spurt of patronage recently as world cup tourists took some time to visit the winelands and other regional attractions.
 

In the vineyards we are well into the pruning schedule and the preparations of young vines for the spring demands our full a ttention.
 
Quite an exciting project is our effort to rehabilitate non-vineyard land at Klein Constantia with plant species endemic to the south eastern slopes of Vlakkenberg and Constantiaberg. To this end we have enlisted the help of two leading Cape botanists whose task it is to scour our contour roads and open land to gather cuttings and seeds, propagate them and then sell them back to us in ready to plant seedling trays of about 120 plants per tray.

 

We have a small nursery which houses the trays until the correct weather conditions arise (generally a few days before predicted rain), and then the seedlings go to ground at specified sites. So far we have successfully planted the first trays of Aristea major (Blousuurkanol), Chrysanthemoides monilifera (Bietou), Metalasia muricata (Blombos), Polygala calyptata, and some yet to be identified ericas, which as soon as they flower will enable identification.
 
Whilst the first small steps have been taken, the ultimate goal is to restore the property to full fynbos glory throughout.

World Cup 2010 at Groot Constantia
 

 

Groot Constantia has seen a wonderful mix of people from all over the world visiting the Estate during the Fifa Football World Cup 2010. Our Tasting Centre has been host to a huge number of visitors since the beginning of the World Cup on the 11th June until the close on the 11th July we have had visitors from 57 different countries visiting the Groot Constantia Estate and tasting our wines, the atmosphere in the tasting room has been buzzing with foreign languages and people having a wonderful time in our country and Cape Town in particular.

Some of the comments from or visitors have been:

Steenberg Vineyards Winemaker JD Pretorius Jets Off to Judge in Bordeaux

Jet-setting young winemaker at Steenberg Vineyards, JD Pretorius recently took off for a visit to Bordeaux to judge a major international Sauvignon Blanc Competition. Selected as one of 40 tasters from 10 countries, JD was the only South African invited to take part in the first Concours Mondial du Sauvignon at the renowned Concours Mondial de Bruxelles during the Bordeaux Fete le Vin wine fair held in Bordeaux, France on 26 June.
 

512 Wines were presented from France, New Zealand, Japan, Switzerland, Spain, Italy, Germany, Greece, Brazil and South Africa. France dominated both awards and entries – with over 300 entries and 90 awards. Chile was the next most successful, with 61 entries and 21 medals.

 

Around 80,000ha of Sauvignon Blanc are estimated to be planted worldwide, with the largest concentrations in France, New Zealand, Chile and South Africa. Steenberg is widely recognised as one of the leading, and most lauded Sauvignon Blanc producers in South Africa.

www.decanter.com reported JD as saying: "Sauvignon is an extremely demanding grape variety to get right, but it is often derided by critics as being too populist, or one-dimensional. Even consumers in South Africa seem to be slowly moving away from it back towards lightly oaked Chardonnays – but it's a grape variety that deserves better critical recognition when in the hands of the right producers."

The Steenberg Shiraz 2008 is deep garnet in colour with hints of white pepper, violets, spice and vanilla fading into subtle mocha on the nose, with firm structure, lots of ripe berry characters on the palate and a soft velvety finish. It makes an ideal partner for fillet au poivre or beef bourguignonne - in fact all red meats grilled over open flames. This wine will continue to develop and will reward cellaring for up to 8 years.

Constantia Uitsig announces that Luke Dale-Roberts will be taking on an exciting new role as culinary consultant to La Colombe restaurant. Dale-Roberts has had a strong and extremely successful relationship with La Colombe since being appointed executive chef over 3½ years ago, and during this time has assisted in transforming the restaurant into the no. 1 culinary destination in South Africa and 12th in the world.
 

During his time on the estate, he has trained and directed a team of kitchen staff comprising some of the most talented chefs in the country, who have worked tirelessly to produce innovative dishes that are consistently rated as the best in South Africa.
  
Dale-Roberts and La Colombe have been winners of both Chef of the Year and Restaurant of the Year in the Prudential Eat Out Awards 2008, as well as being honoured with the title Eat Out Restaurant of the Year for 2009. Furthermore, La Colombe has also achieved the pinnacle three star rating in both the 2009 and 2010 editions of the highly-acclaimed Rossouw’s Restaurants guide.

 

International achievement for La Colombe includes a phenomenal 12th place in the San Pellegrino World’s 50 Best Restaurants awards, announced in London recently. Having moved up 26 places and into the hallowed Top 20, this bastion of contemporary French-meets-Asian fine dining thereby also clinched the Aqua Panna Best Restaurant in Africa and Middle East award.

  
Dale-Roberts has now decided to extend the template of his managerial successes, but will continue to closely align himself to La Colombe by overseeing the menu and kitchen. At the same time this will afford him the opportunity to develop further creative culinary ideas and directions. Marlene McCay, a director and owner of Constantia Uitsig, is fully supportive of this new collaboration:

Cellars-Hohenort - The Greenhouse gets a beautiful new home

 

  

The talented design team of Hotcocoa who, in the past, has been involved in the design of all the restaurants and bars within The Collection by Liz McGrath, took on this new project with great enthusiasm. They have created the perfect space for The Greenhouse, now an intimate 45 seater fine dining restaurant, offering one of the best tasting menus in South Africa.
   
“When Liz McGrath asked us to design the new Greenhouse Restaurant in the 100 year old Hohenort building, we knew we had to approach it quite differently from any other of the projects we had done for her. This space, previously occupied by the Cape Malay Restaurant, was difficult – made up of 3 small rooms with awkward half openings between them. In addition, Liz wanted to add a greenhouse to the outside of the building on the front balcony” says Dawn Dickerson.

 

Architect David Misplon was brought in to design a simple Victorian greenhouse – lots of glass & white timber work. He used the existing cottage pane doors and added cottage pane windows with sheets of glass to create a perfectly proportioned, yet simple greenhouse. The result has totally transformed the space. It is a triumph, linking the restaurant to the garden and the Steenberg Mountains across the valley. Sitting in the greenhouse section, with the glass ceiling, is magical!!
  
“The lighting called for a different approach and I wanted to create warm pools of moody light; firstly from a series of simple metal standing lamps. The repetition creating rhythm, a graphic element and more importantly linking the 4 different spaces together. We then added recessed double down light fittings that we had specially made. These lights give accent to the plants, feature wall paper and tables. A simple and subtle way of showing off the star attraction – the food. These two lighting elements combine to create exactly the warm, moody and sensual feeling that I was looking for. The restaurant is just beautiful in the evening” adds Dawn
.

Always a challenge in a restaurant is how to create warmth, yet still to use practical finishes and most importantly to keep the noise level down, as hard surfaces often make this a difficult issue to solve. “We proposed using the new Cork Tiles and Liz McGrath understood what we were doing immediately & bravely agreed. The tiles are a limed, soft, warm white. They are also soft underfoot, quiet and beautiful visually” says Dawn.
 
The beautifully simple and graphic traditional Sanderson Fern print wallpaper and fabric was chosen playing with different colour ways, taupe and black wallpaper and the green fern on the backs of chairs. Wonderfully curved shield back chairs, sensuous curved love seats in charcoal and stone grey pull the interior colours and mood together. The final layering accentuates the Greenhouse theme with ferns, luscious orchids and the classic element of stone urns and artifacts.

 

Award winning chef Peter Tempelhoff, Executive chef for The Collection by Liz McGrath, has had to create a very special menu for this very special space and as a result sees the introduction of Peter’s new conceptual cuisine. Over the past few months, this Top 10 kitchen team have been hard at work developing an ‘Imagination’ tasting menu, where every dish is a surprise. Dishes such as ‘Winter Forage’ and ‘Shellfish on a Beach’ will leave you guessing until they arrive at the table. A freshly polished service team at Liz McGrath’s flagship restaurant will make this a very special dining experience!

I love the sophistication, the textures, the lighting, just everything!” adds Liz McGrath. “Simple understated elegance with lots of references to past classical styles, but done in a thoroughly modern way. Fact Sheet: The Restaurants at The Cellars-Hohenort

 

The Greenhouse: 40-45 seat intimate fine dining restaurant. Chef Peter Tempelhoff will be at the helm of it, and back on the stoves. Open 5 nights a week (Tue-Sat) as our aim is to keep food & service at a consistently high level, with the same team on all the time.
 The Conservatory which occupies the old Greenhouse space will now be the main restaurant at the hotel. We are injecting a fresh look here, while keeping the historic feel, focused around the 300 year old oak tree. Head chef, Michael Cooke, will be creating some hotel classics alongside some new trendy dishes focused around our bountiful gardens and local produce. Also very exciting!
Lastly, we have decided that our gem of a chef, Martha Williams, needs a platform to show off her talents. We are therefore launching ‘The Cape Malay Experience’. The concept is... groups of 12 to 24 people can book a Cape Malay dinner which will be hosted, explained and served by Martha and her team – we have transformed a private dining area into a cosy Malay restaurant and demonstration kitchen. This decision was made because of the popularity of Martha’s cooking classes (aptly named Cooking with Martha), and the necessity for us not to ignore the region’s diverse culinary history, and its amazing people. We have many inquiries from far and wide, looking for a taste of our wonderful Cape Malay cuisine.
